Elizabeth Plotke
As founder of Campo de Fiori restaurant and Campo Catering, Elizabeth’s passion is food.
In 1994, Elizabeth opened her first restaurant in a tiny 850-foot space in Aspen. It was an absolute labor of love, and to everyone’s delight, Campo de Fiori still flourishes and receives local, national and international praise. With over 25 years of experience and travels, Elizabeth couldn’t be more excited to dedicate creative energy into Campo Catering! Influenced by food from around the world – as well as the best of Italian cuisine – Campo Catering offers originality, beauty, and extraordinary sensory experiences for every catered event.
Anna Garafolo
Anna grew up in a small Italian town on the Amalfi Coast. Her upbringing – rich with love and tradition – instilled in her the value of family and hard work. Learning the foundations of Italian cuisine at a very young age, Anna understands the effects and necessity of healthy meals that feed the body and the heart.
In 2004 Anna joined her brother, Campo’s chef Guiseppe Garofalo, in Aspen, Colorado. In Aspen, after working with some of the greatest chefs and restaurants that an international mountain town has to offer, Anna joined the Campo team. As Anna often says, "We eat with our eyes!" and she certainly has a sought after knack for appealing to ones senses in every way. And even more importantly, Anna Garofalo is a woman of her word. She isn't capable of delivering anything but the very best.
Justin Heiber
Justin grew up in Calabasas, California where he developed his love of food at a very young age. As a young boy, he began cooking and baking with various family members who delighted in sharing the secrets, stories and anecdotes of generational family recipes and their history. As an avid golfer, fly fisherman and outdoor enthusiast, with a deep love of nature, Justin realized at a young age that Colorado could provide a great mixture of work and the pursuits that reflect his adventurous spirit and outdoor lifestyle that he shares with his wife Marianne and their beloved young daughter.
After working at a large Denver based catering company for a few years, in 2013 Justin moved to Aspen to be closer to the mountains and start his local culinary career as a Campo de Fiori bartender. While tending bar he helped create many of Campo’s very popular signature cocktails. Over the years Justin distinguished himself as a dynamic, energetic and unflappable leader and began to help run catering events and occasionally manage the door on Dave’s nights off. In 2024 he was promoted to assistant manager.
We feel very lucky to have a leader like Justin on the Campo team. His passion, intelligence, attention to detail and deep knowledge of not only our restaurant business, but also our catering business has been a great addition to the Campo management team.
